Run, coffee and cruise through Sunday

Sunday winter morning… Chilly 7 degrees celsius and a crisp blue sky. What better way to get the day started then a beautiful 6km run from Bondi Beach to Bronte?

Being able to enjoy my surroundings on foot and in my own time is just one of the reasons Why I fell in love with running!

The half way mark always calls for a good stretch..

And the end mark,  calls for a good coffee 🙂

This whole-in-the-wall coffee shop ‘Birichino’ makes great coffee in eco-friendly take-away cups. If you are in the area, check it out.  The decor is defs my style and the staff were nice and friendly!

We were then lucky enough to spend the rest of the day enjoying Sydney in the best way possible.. On the water with Josh’s family.

Josh’s mum always throws together a delicious lunch. Today was Tuna Niçoise salad, with bagels, olive dip, humous and triple-cream brie cheese. Delish! Thanks Cheryl 🙂

We had the most wonderful day and enjoyed soaking up the sun.
Who would have thought  it was winter??

Well that was my Sunday and I definitely feel reengerised for the week ahead 😀

How did you spend your Sunday?

Sweet end to a busy day

Yesterday was a no show for me on my blog. Here is why.

4:30 am Wakeup- Breakfast and Study in bed 🙂

Wonderful day at school… Nothing brightens my day more than a Kindergarten letter of apology from one naughty boy to a little girl…

Packed school lunch. Nothing too exciting, but yum nonetheless.

Transformed it into toast with avocado, tomato and mixed greens – hit just the right spot 😉

With a side of peppermint tea in my favourite enviro-friendly cup.

From school I rushed to get to my exam.. Exam needs not to be elaborated upon but hey, 5 years and 2 degrees later I am now officially finished Uni fffforever 🙂

From there,  dinner with Liv, who I hadn’t caught up with the whole week. We ended up going to a great Italian restaurant ‘Pizza Olla’.  There were so many options on the menu but we ended up going for the Romancini pizza  (Bocconcini, Tomato and Basil) with a Greek salad on the side. Yum! Company was lovely as always 🙂

Following dinner I headed to Bondi to meet Josh for a celebratory drink at ‘The Crossing’ a cute, cosy, candle-lit bar.  A glass of Shiraz was the perfect way to end a busy day… or so I thought.

After the vino we both felt like dessert.. chocolate and wine just rely on eachother to fully complete the experience don’t you think? But nowhere was open, so a 7/11 trip to buy a chocolate slab (dipped into peppermint tea) on the couch ticked all the right boxes.

What an awesome end to a big day! Now let the weekend begin 😀

Happy Friday!

So now to you… What’s the best way to end a busy day?

Simple and well-balanced lunch idea

Need some inspiration for a quick, healthy and delicious lunch idea? Try this…

Chicken and Avocado Wrap
It is so easy and only 4 ingredients! No mess and no fuss 🙂

*I used Wholewheat Mountain Bread which is always on hand in my freezer; it is nice and thin, but holds its shape well. It is perfect for wraps, lasagnes or even grilled (best with a brush of olive oil and a sprinkle of your favourite seasoning). Great for serving with soup or dips.

*I woud have added spinach leaves, rocket or kale, but we were all out. So if you have some greens on hand – throw them in.

-Mountain bread or wholemeal wrap
-Chicken breast (or substitute with tuna, meat or another protein of your choice)

-Leave mountain bread to defrost for a few minutes or place in microwave for 10 seconds
-Spread on avocado (keep a bit of room on top and bottom)
-Slice chicken breast and pickles nice and thin
-Place on wrap and then roll in the outsides to bring it all together
-Place in sandwhich press and leave until mountain bread is nice and golden.

Back to studying for me. Final Psychology exam (ever!) on Thursday 🙂

Happy Saturday!

What are you having for lunch?

Rainy Day

Good morning, friends!

Don’t you agree that it is just THAT much harder getting out of bed on a rainy day?

View from my balcony

Well that was certainly the case this morning. My day is starting nice and early, I am off to teach a Kindergarten class at a school around the corner. I am a ‘casual’ teacher which means I fill in when one of the permanent staff are away. It is great – I love it! But waiting for those calls can sometimes be a pain.

This morning I had my usual oats and tea for breaky

Oats and Tea mmm

and packed my school lunch

Vegetable minestrone soup, apple, banana, picnic and tea!

The plan was to go for a run after school, but this weather is not looking promising.

What exercise do you like to do on a rainy day? (or is it an automatic excuse for a ‘rest’ day?)

Anyway, lets stay optimistic and hope it clears up 🙂

Have a great day!
